It's a Celebration, not a Crisis.

What does a single mom do with an empty nest, especially during a global pandemic? She does what she has always wanted to do: Buys an Airstream and enrolls at the Culinary Institute of America in their intense Accelerated Culinary Arts Program. It’s not a midlife crisis; it’s a midlife celebration.

One of the basic techniques that is taught at the CIA is Flavor Development - beyond salt, fat, acid, and heat. Flavor is achieved by building layers from stocks and flavorful liquids which are then added to sauces, or soups, or used to cook proteins for a combination that creates an experience, and if we are lucky this experience is extraordinary and one that is remembered for a long time.

This is one of the fundamentals of cooking, and one of the most challenging (and in my opinion the most fun) to try and achieve.  Here at 72 Cookies, we add a couple more building blocks to our cookies’ flavor development, beyond the salt, fat, acid, and heat; we hunt for texture and probably the most important one for me: emotion.
